Couscous is a fantastic, all-around pasta composed of tiny grains of durum wheat that are steamed. Makes a great breakfast cereal, ingredient in salads, and sweetened as a dessert. Usually used as an addition for soups or sauces in the same way as rice. Couscous delivers a low fat supply of fibre and complex carbohydrates, with essentially no sugar. Directions: Add 1 1/2 cups boiling water or stock and a knob of butter or olive oil to 1 cup couscous in a bowl. Cover and wait for 15 minutes. Then stir with a fork.
